A product full of tradition and quality, elaborated by artisan’s hands with attention and careful treatment, following techniques that are more than a century old. To do so, the best anchovies fished between April and June has been chosen, in its best season. In spring the amount of fat in anchovies increases and it makes them more flavorful.
Anchovies are captured in the Gulf of Biscay by Getaria’s fishing boats. The fact that Maisor factory is a few meters away from the fish market ensures the freshness and quality of the product.
