Label Rouge is  a kind of labelling which give a guarantee of superior quality for products of the same nature. It means that the product is farmed following a special specifications and reach a high level of quality.

The ratio between the weight of the whole fish and the fillets is 2 , which means that for a fish of 1 Kg, you will get around 500g of fillets.

One fish of about 3 Kg will be enough as a starter for 24 and a main course for 12 .
