The Canadian lobster is frozen with nitrogen cryogenics, raw and decorticated. Each lobster is controlled up-stream then decorticated when it is raw. The process does not shock the animal and keeps it from stress. Thus, the quality of the flesh is incomparable.
It can be prepared raw – sashimi, carpaccio, sushi – or cooked – steamed, fried or baked.
