The fish is rich in omega-3 acids, and generally considered to be very healthy for those who favour the taste.
Because it is low in the food chain sardine is very low in contaminants.
Its salty flavour, oily texture and very distinctive smell make it an amazing dish once fried or simply grilled.
The season starts in the beginning of June.
